Coconut Dry Fruit Energy Bites

I always look for something healthy while preparing food. So I tried preparing something with dry fruits after reading the procedure from one of the Pinterest posts. Here it goes:

Ingredients:

  1. Fresh Coconut cream (I used grated coconut and few chopped pieces)
  2. Cashews
  3. Almonds
  4. Dates
  5. Ghee or Oil
  6. Vanilla extract

Cooking time:

Approx. 40 minutes

Procedure:

For 1 cup of Coconut cream use half cup of cashews, half cup almonds, and half cup dates. Add 2 tablespoons of ghee or oil and half tablespoon vanilla extract. Powder your almonds and cashews. Cut dates into small pieces, add ghee and vanilla extract and make a paste. Add water if required. Add one tablespoon of water and if it is not sufficient to add another. Take coconut pieces and grind them in the mixer for 2-3 seconds just to make a finely chopped coconut pieces. Now mix all the ingredients and start preparing balls. For garnish roll the balls in grated coconut. ( I did not roll them in grated coconut. It’s just optional). Store them in the freezer and use up to 30 days.
